Making up 90% of all food allergies are these foods: eggs, milk, peanuts, tree nuts, fish, shellfish, wheat, and soy, according to ACAAI. In most cases, an allergic reaction to one type of food may mean that a person is also sensitive to another similar type of food as allergies and the properties in the food causing an allergy are linked. It is now known that there are two genes, called HLA DQ2 and HLA DQ8, which are found in about 99% of people with coeliac disease. However, these genes are also present in about 35% of people with coeliac disease. So whilst the majority of people with coeliac disease have the HLA DQ2/DQ8 gene variants, the majority of people with these genes donât have coeliac disease. This is because coeliac disease only affects about 1% of people. So, if we have 100 people, about 35 of these people will have the HLA DQ2 or DQ8 genes, but only one of them will have coeliac disease.

This week we are going to be looking at a gene that affects how well we can tolerate lactose. Roughly 65% of the worldâs population lose the ability to digest lactose, the sugar found in milk, after weaning. From an evolutionary perspective, this makes sense â humans typically need to digest milk when they are babies because their main source of nutrition is breast milk; however, once the child has stopped breast feeding, historically there was no need for them to continue to digest lactose, because milk wasnât readily available. However, as humans migrated out of Africa into Asia, and eventually into Europe, a small polymorphism occurred which enabled some of them to continue to digest lactose into adulthood.

That morning coffee â many of us canât really live without. We get cranky without our daily caffeine fix. Itâs a habit a lot of us have. In fact, British Coffee Association recently stated that in the UK we drink a whopping 70 million cups of coffee a day. Itâs more or less the equivalent of 7 Olympic size pools. We consume a lot of that black miracle-worker. It wakes us up, makes us feel human in the morning and tastes pretty good too. But what effect does caffeine actually have on our body?
